Ingredients
  

  • 2 cups grilled chicken breast sliced (or shredded rotisserie chicken)
  • 4 large tortillas whole wheat or spinach
  • 1 can black beans 15 oz, drained and rinsed
  • 1 cup corn fresh, frozen, or canned
  • 1 red bell pepper diced
  • 0.5 red onion diced
  • 1 cup shredded cheese cheddar or pepper jack
  • 0.5 cup Southwest dressing or homemade version
  • shredded lettuce and avocado slices optional

Instructions
 

  • Cook chicken with salt, pepper, and olive oil. Grill until fully cooked or shred rotisserie chicken into large pieces.
  • Mix black beans, corn, diced bell pepper, and red onion in a bowl.
  • Assemble wrap by layering lettuce (if using), chicken mixture, cheese, and Southwest dressing.
  • Add avocado slices for extra creaminess.
  • Roll tortilla tightly, tucking sides as you go, and cut in half.
