Preheat a grill or skillet over medium-high heat. Season chicken breasts with salt and pepper and cook for about 6-7 minutes on each side until golden brown and cooked through.
While the chicken is cooking, in a bowl, combine Greek yogurt, minced garlic, diced cucumber (drained), chopped dill, lemon juice, olive oil, salt, and pepper. Mix until well blended.
Dice any additional vegetables like red onions or bell peppers and place them in a large mixing bowl.
Once cooked chicken has cooled slightly, chop it into bite-sized pieces and add to the veggie mix along with the tzatziki dressing. Stir gently to coat all ingredients.
Serve over mixed greens or inside pita pockets with extra dill if desired.
