Refreshing Tzatziki Chicken Salad Recipe

Ingredients
  

  • 3 boneless, skinless chicken breasts chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 1 medium Persian cucumber diced
  • 2 tbsp fresh dill chopped
  • 1 lemon lemon juice of
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat a grill or skillet over medium-high heat. Season chicken breasts with salt and pepper and cook for about 6-7 minutes on each side until golden brown and cooked through.
  • While the chicken is cooking, in a bowl, combine Greek yogurt, minced garlic, diced cucumber (drained), chopped dill, lemon juice, olive oil, salt, and pepper. Mix until well blended.
  • Dice any additional vegetables like red onions or bell peppers and place them in a large mixing bowl.
  • Once cooked chicken has cooled slightly, chop it into bite-sized pieces and add to the veggie mix along with the tzatziki dressing. Stir gently to coat all ingredients.
  • Serve over mixed greens or inside pita pockets with extra dill if desired.
