Easy Taco Soup

Ingredients
  

  • 1 pound lean ground beef
  • 1 small onion chopped
  • 4-5 cloves garlic minced
  • 4 cups beef or chicken broth or stock
  • 1 oz corn drained
  • 1 oz black beans drained and rinsed
  • 1 oz chili beans in chili sauce
  • 1 oz crushed tomatoes
  • 1 oz chopped green chiles
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano, onion powder, and garlic powder
  • Salt, pepper, and cayenne pepper to taste

Instructions
 

  • Brown the ground beef in a large pot over medium-high heat.
  • Add the chopped onion and minced garlic to the pot and sauté until softened.
  • Stir in the chili powder, cumin, oregano, onion powder, and garlic powder. Cook for 1-2 minutes.
  • Add the remaining ingredients to the pot, stirring to combine.
  • Bring the soup to a simmer, reduce the heat to low, and let cook for 20-25 minutes.
  • Season with salt, pepper, and cayenne pepper to taste, then serve hot.

Notes

For extra flavor, top with shredded cheese, sour cream, diced avocado, or crushed tortilla chips.
