Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 medium red bell pepper diced
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 can diced tomatoes 15 oz
  • 1 can green chilies 4 oz
  • 4 cups chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 2 cups cooked chicken shredded
  • Salt and pepper to taste
  • Optional toppings shredded cheese, sour cream, cilantro, lime wedges

Instructions
 

  • Heat Oil in Large Pot
  • Sauté Onions Until Translucent
  • Add Garlic and Bell Pepper
  • Add Beans, Corn, Tomatoes
  • Simmer With Spices Added

Notes

For added convenience, use store-bought rotisserie chicken for the shredded chicken.
