2cupscooked, shredded or diced chickenrotisserie or poached
1cupmayonnaise
1tablespoonDijon mustard
1cupcelery, diced
1cupred grapes, halved
1/4cupgreen onion, chopped
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the shredded chicken, mayonnaise, and Dijon mustard. Mix well until the chicken is coated.
Add in the diced celery, halved red grapes, and chopped green onions. Gently fold these ingredients into the chicken mixture until everything is evenly distributed.
Season the salad with salt and pepper to taste; mix it all up!
Chill in the refrigerator for about 30 minutes to let the flavors meld together. Trust me, it’s worth the wait!
Serve your chicken salad in a sandwich, on a bed of lettuce, or straight from the bowl!
Notes
For a quicker preparation, use pre-cooked rotisserie chicken and pre-washed greens if desired.
