Ingredients
  

Chicken

  • 2 cups cooked, shredded or diced chicken rotisserie or poached
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 cup celery, diced
  • 1 cup red grapes, halved
  • 1/4 cup green onion, chopped
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the shredded chicken, mayonnaise, and Dijon mustard. Mix well until the chicken is coated.
  • Add in the diced celery, halved red grapes, and chopped green onions. Gently fold these ingredients into the chicken mixture until everything is evenly distributed.
  • Season the salad with salt and pepper to taste; mix it all up!
  • Chill in the refrigerator for about 30 minutes to let the flavors meld together. Trust me, it’s worth the wait!
  • Serve your chicken salad in a sandwich, on a bed of lettuce, or straight from the bowl!

Notes

For a quicker preparation, use pre-cooked rotisserie chicken and pre-washed greens if desired.
