Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs
  • 4 pieces drumsticks
  • 2 cups buttermilk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika optional, for color
  • 2 cups all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper optional, for heat
  • 3–4 cups vegetable oil for deep frying

Instructions
 

  • Marinate the chicken in buttermilk with salt, pepper, and paprika for at least 4 hours.
  • Prepare the coating with flour, salt, garlic powder, onion powder, paprika, black pepper, and cayenne.
  • Dredge the chicken in the seasoned flour, pressing firmly to coat. For extra crispiness, dip back in buttermilk and dredge again.
  • Heat vegetable oil to 350°F (175°C) in a deep skillet or Dutch oven.
  • Fry the chicken for 12–15 minutes, turning occasionally, until golden brown and internal temperature reaches 165°F (74°C).
  • Drain on a wire rack or paper towels and let rest before serving.

Notes

For the crispiest coating, ensure the oil reaches the correct temperature and don't overcrowd the pan.
