Instructions
Marinate the chicken in buttermilk with salt, pepper, and paprika for at least 4 hours.
Prepare the coating with flour, salt, garlic powder, onion powder, paprika, black pepper, and cayenne.
Dredge the chicken in the seasoned flour, pressing firmly to coat. For extra crispiness, dip back in buttermilk and dredge again.
Heat vegetable oil to 350°F (175°C) in a deep skillet or Dutch oven.
Fry the chicken for 12–15 minutes, turning occasionally, until golden brown and internal temperature reaches 165°F (74°C).
Drain on a wire rack or paper towels and let rest before serving.
Notes
For the crispiest coating, ensure the oil reaches the correct temperature and don't overcrowd the pan.
